This Italian Crusted Salmon dish gets its incredible flavors from the parmesan, lemon zest, garlic, and -of course- oregano in the gluten free breading. I use 6 oz pieces sushi grade Norwegian Salmon from Hillcrest Foods, baked in the oven. Served with Rosemary Green Bean Almondine and Roasted Garlic Rainbow Potatoes.

Remove salmon and heat potatoes and veggies for 1 min. Add salmon back in and heat at 50 % power for 1min 20 seconds as to not dry out the salmon. Keep refrigerated.
